現在の料理長で息子の今田洋輔が受け継いでからは、新しい建物を建てたり、改装したりして、当時の高級店では当たり前だった「一見さんお断り」「時価提供」を否定し、平等に顧客を扱うことにより今のスタイルを確立していきました。
